This dish is an icon of Uruguayan traditions and lifestyle. Nobody prepares an asado just for itself. Asado (grill) is a reason for reunite, an excuse for meeting, to bring closer those that are far away.
When we say asado, it is not just a piece of meat, but it is everything around it. Different kind of meat, vegetables and cheese.

The Asador (person that grills) is the most important part of this social event, making it the creator of the dish and a bit of a master of ceremony. The asador is who leads the meal, who manages the time and indicates when and how to taste his work. If he succeeds, will receive praise and ovations.
